Creamy Cauliflower Soup
I was exploring some different ways to pack some vegetables into my kiddos diet. They love cauliflower (raw, roasted, or sauteed), but I felt like mixing it up and making some “zuppa”. Here is the product:
Ingredients:
- 2 large heads of cauliflower, washed, and chopped into florets
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 5 cups vegetable broth (or water with 1 bouillon cubes) - - generally, I just eyeball the liquid until it comes close to covering the veggies
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley minced for extra flavoring and garnish at the end (optional)
- Fresh parmesan cheese grated for extra flavoring (optional)
Instructions:
1. Prepare the Vegetables: Start by chopping the cauliflower into small florets, and chop the onion, garlic, carrots, and celery.
2. Sauté the Aromatics: In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for about 2-3 minutes until they become fragrant and translucent.
3. Add the Vegetables: Add the chopped carrots, celery, and cauliflower florets to the pot. Stir everything together and cook for another 5 minutes, allowing the vegetables to soften slightly.
I actually roasted the cauliflower on 350 for about 15-20 minutes before adding them to the sauteed mix.
4. Season and Simmer: Season the vegetables. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 20-25 minutes or until the vegetables are tender.
5. Blend the Soup: Using an immersion blender, carefully blend the soup until it's smooth and creamy. If you don't have an immersion blender, you can transfer the soup in batches to a blender, but be sure to allow it to cool slightly before blending, and then reheat it afterward.
6. Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed.
It pairs wonderfully with a slice of crusty bread or a salad.
