We don’t have a lot of property, but we have definitely made use of our available space for gardening and harvesting fresh produce. In addition to eating garden fresh fruit or vegetables, there are many mental and physical health benefits to building your own garden.

The benefits of going outside and getting some vitamin G (green)

  • Lowers blood pressure

  • Increased in vitamin D

  • Enhanced oxygen in the blood

  • Reduced stress levels

  • Improved mental well-being

We just harvested our first batch of romaine lettuce and we’ve been enjoying different salad variations. So, here are some salad recipes to mix-up!

Red, White, and Blue Salad

  • Strawberries (or raspberries) - - - for the red

  • Slivered almonds - - - for the white

  • Blueberries or blackberries - - - for the blue

  • Poppyseed Dressing:

    • olive oil

    • Greek yogurt

    • lemon juice

    • apple cider vinegar

    • honey

    • poppyseeds

    • salt

Sweet Salad

  • Kale

  • Apple cider vinegar

  • Honey or maple syrup

  • Fresh fruit (citrus, apple slices, berries, pears)

  • Nuts or seeds (walnuts, almonds, pecans, pumpkin seeds)

Savory Salad

  • Mashed avocado with olive oil

  • Salt, pepper, and garlic powder to taste

  • Tomatoes

  • Sunflower seeds

  • Slivers of carrots

  • Cucumber

  • Raw onion slices
