World Food Day - celebrated on October 16th each year - is an excellent opportunity to explore and enjoy diverse Blue Zones cuisines from around the world!
Spicy Chickpea and Vegetable Stir-Fry
Ingredients:
For the Stir-Fry Sauce:
- 2 tablespoons low-sodium soy sauce or tamari (for a gluten-free option)
- 1 tablespoon sriracha sauce (adjust to your spice preference)
- 1 tablespoon honey or maple syrup (for a vegan option)
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- Juice of 1 lime
For the Stir-Fry:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 1 cup snap peas, trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
Instructions:
1. In a small bowl, whisk together the soy sauce or tamari, sriracha sauce, honey or maple syrup, sesame oil, grated ginger, minced garlic, and lime juice. Set aside.
2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the broccoli florets and cook for 2-3 minutes, stirring occasionally.
Add the red bell pepper, carrot, zucchini, and snap peas to the skillet. Stir-fry for another 3-4 minutes or until the vegetables are tender-crisp.
Push the vegetables to one side of the skillet and add the remaining 1 tablespoon of olive oil to the empty side.
Add the drained chickpeas to the skillet and cook for 2-3 minutes, stirring occasionally, until they start to brown slightly.
3. Pour the prepared stir-fry sauce over the vegetables and chickpeas. Stir well to coat everything evenly. Reduce the heat to low and let the mixture simmer for 2-3 minutes, allowing the sauce to thicken slightly. Taste and adjust the seasoning with salt, pepper, or more sriracha sauce if desired.
