Autumn Farmers Market Salad

Autumn salads are a great way to pack in the best flavors of the season - much of which can be sourced locally! Check out this easy salad put together by one of our dietitians after visiting the farmers' market and apple orchard last week. Dress it up with the apple cider vinaigrette recipe below or your go-to-favorite dressing.

Salad Ingredients:

  • Local lettuce

  • Local kale

  • Local carrots

  • Apples from Justus Orchard

  • Goat cheese from Three Graces Dairy

  • Toasted pumpkin seeds

Apple Cider Vinaigrette (makes 2 servings):

  • 1/2 shallot, minced

  • 2 Tbs apple cider vinegar

  • 1/2 tsp dijon mustard

  • 1 tsp maple syrup 3 Tbs olive oil-small pinch salt and pepper

*If you have apple cider on hand, consider adding 1-2 tablespoons of this to the dressing - it adds a delicious fall flavor to the dressing!
