Veggie Charcuterie Board

Summer is around the corner. It's a chance to get out, enjoy the weather, and spend time outside with friends and family. Who wants to sit in a hot kitchen and cook?! Try offering a charcuterie board of healthy foods for your meal as an alternative. These items are packed with nutrient dense fats, fiber, phytochemicals, and antioxidants. Choose a couple of foods from each flavor profile. These are just a some suggestions to hit the different taste preferences in your family and get you started. You can offer whole grains like quinoa, brown rice, or bulgur to fill your tummy or place these items on a bed of greens to make a creative salad.

Salty:

  • Olives or an olive tapenade to spread on whole grain crackers/baguette crisps

  • Salted or unsalted nuts- blanched almonds, walnuts, pistachios

  • Pickles, fermented vegetables

Savory:

  • Roasted chickpeas

  • Falafel

  • Hummus

Spicy:

  • Pickled radishes, cauliflower, or carrots

Veggies:

  • Cucumbers

  • Sugar snap peas
